What is Colonial Cooking Style?
Food formed an elemental part of the colonial culture, no matter whatever class of people it was served to. Most interactions took place among people when seated around the dining table. So a conversation started at dinner could very well carry on till late in the night! It was therefore imperative that the dining table be kept well stocked at all times. It was also essential that everyone know at least the basics of colonial cooking, be it woman or man, poor or rich, white or black.
Colonial cooking demanded that certain conditions had to be adhered to. Only a wood fire could be used for the cooking. The cook had to have knowledge about handling the fire so that food could be cooked properly. No food was eaten raw, not even vegetables and fruits.
Colonial cooking centered round a staple diet of meat cooked in various forms. In fact, animals were often cooked with their feet and heads still attached and were served in the same way! Anyone wanting to have chicken would find one, kill it and cook it in the morning itself, consuming it for breakfast, lunch and dinner to ensure that it did not get spoilt. The preference was therefore to always have fresh food on the table. Of course, there were certain animal foods that could only be obtained seasonally.
Curing or smoking was a method of preservation used at times because of a peculiar fondness for the organs of animals. Meat gravies and sauces were sopped up with the help of rolls. Drinks were also a part of their culture, and tasted quite sweet. Large amounts of alcohol were added to the punches.
A very basic style of colonial cooking was found among the lower classes, who had limited equipment to cook with. The meal served consisted of whatever could be cooked in just a cast iron pot — mainly a dish called “hominy” prepared from corn, vegetables and salt-cured pork. Other meats and vegetables were consumed with this main dish. Generally, the wife cooked porridges and soups in the pot.
The middle class were a little better, but even they were divided into lower middle class and upper middle class. While it was left to the ladies to attend to the cooking in lower middle class families, slaves could take over in the upper middle class households. On special days, both tried to keep up with the gentry.
Only next to the governor in status, the gentry indulged in expensive colonial cooking. The cooking more or less followed English traditions, with every meal combining both sweets and meats. They could afford to keep slave cooks. These cooks were quite skilled in spite of having less formal training. Not to be compared to the governor’s cooks, yet these slaves were held in high esteem and paid very well. In fact, a few slaves even became free via their cooking skills!
The best colonial cooking could be seen at the governor’s household. The kitchen was equipped with an eight-day clock, a spit jack, and plenty of copper pots. European cooks with professional training and trained apprenticeships were in charge as the principal cooks, and received princely sums for their efforts. No cook in the colonies could compare with them. Thus, the governor could afford to employ several cooks and sample different cuisines, though the dishes had a distinct French flavor.

I absolutely love this cookie press. I grew up using the aluminum cookie press with the screw mechanism- so I had something literally foolproof with which to compare this product.
I am baking as we speak a batch of spritz cookies, and it was a breeze! It took me half the time that the regular cookie press would take. I found that 1 click made a good size cookie and 2 clicks made (in my opinion) too big of a cookie…just depends on your preference. I did not experience any pressure issues with tops popping off or anything else that was mentioned as a negative (I read through the reviews prior to my purchase). If you wish to have more control than 1 click or 2, you always have the option of using the metal release and forcing the top down. An important thing to note is that this does not have the 3 metal feet that the aluminum presses generally have. With this press you simply make sure that that the plastic touches the cookie sheet do your clicks and pull off.
I also used this gadget for icing cupcakes, and it worked out great. Again, no pressure issues, or any to speak of. I did find that holding down the metal release was a little awkward, but it’s so much easier than a pastry bag where everything spills out.
The clear storage case is a HUGE plus (BTW the case has rubber feet on the bottom to hold it in place). The value is good considering that you get essentially two gadgets in one- cookie press and cake decorator; twelve cookie plates, and six decorating tips.
“Handy for many different things”

I originally purchased this cookie press many years ago. It was lost in moving, so I am buying another! I found it especially useful for helping my daughter eat her vegetables! (when she was little!) I made a manicotti type filling; finely chopped some brocolli in the cuisinart and mixed it in the filling; put it in the cookie press with the smooth round cake decorator tip and squirted it into small tube shaped pasta. Put in a pan, covered with spaghetti sauce and baked – she loved it! And never knew she was eating her veggies! I’m going to try making some home-made marshmallows with it….we’ll see what happens! 
It does work very well – the stainless steel parts make all the difference. I am not an expert by any means with ‘fancy’ baking – but this press is easy to use – a pleasure! Cleanup is easy!

Cookies have always been one of the world’s favorite snacks. Whether chewy, chocolaty, or nutty, these treats can be enjoyed any time of the day. Cookies go well with any time of the day, like breakfast and snack or TV time, and are perfect as adorable packages of edible giveaways for any special occasion. Making cookies at home can be lots of fun, especially when you make them with kids or that special someone. Don’t forget to mix in what they call the “secret ingredient,” which is really no secret at all.
But for those who are in a hurry and want to make delicious cookies without the wait or risk of having trouble baking them — we’re all too familiar with that acrid burning smell wafting from the oven, aren’t we? — there are no-bake cookie options that result in just as yummy, though much easier to prepare, decadence. When you bake cookies, the heat enables the flour and other ingredients to cook. It can make the cookies crunchy, crumbly, soft, or chewy. But no-bake cookies also offer a great texture without nearly as much effort. Here are some sure-fire no-bake cookie recipes that will be a hit with everyone.
Combine dry ingredients in a saucepan: two cups of sugar and a third cup of cocoa. Next, slowly pour in a half-cup of milk, followed by one-fourth cup of butter. Place the mixture over medium heat and stir occasionally until butter melts and mixture starts to boil. When you notice that the ingredients have dissolved and the mixture is combined thoroughly (usually about 2 minutes), remove the pan from heat.
Immediately add half a teaspoon of vanilla extract and half a cup of peanut butter to the mixture (make sure to do this while it is still hot). Next, add two and a half cups of oats and stir to mix thoroughly. Allow the “dough” to cool enough to handle but so long that is sets, then spoon your desired size serving onto wax paper. The average serving for one hearty cookie is about two spoonfuls per cookie. Allow cookies to set for about one hour, or until the cookies reach a chewy but solid consistency.
If you’re game, you can also add or substitute other ingredients for a variety of tasty confections. For instance, use brown sugar instead of white for extra sweetness and crunch, dried fruits such as strawberries or cranberries for healthier treats, or toasted coconut or chopped nuts for a bite full of surprise and goodness. It is very easy to modify, personalize, and create your own cookie recipe with homemade no-bake cookies. Experiment and have fun!
If you’re in a super hurry, most grocery stores offer the option of prepackaged no-bake cookies. Simply remove them from the packaging, follow the instructions on the box — most require that you just add water and butter — chill them in the fridge for a few minutes, and enjoy!
