Diabetic Candies: Strawberry Fudge Balls and Texas Cow Patties
One the the biggest adjustments for me when I was diagnosed as a type 2 diabetic was, in a word–Candy! As all those who are familiar with my website and writings know, sweets are my weakness. I could skip the meal just to get to the dessert table and it wouldn’t bother me one bit. I soon found that “sugar-free” candy cost quite a bit more than regular candy and sometimes it wasn’t very good. That’s not to say all “sugar-free” candy isn’t good, some of it is downright delicious–and expensive. So I started working with some of my favorite candy recipes and have come up with some good alternatives. Below are a couple of my favorites to share with you.
STRAWBERRY FUDGE BALLS
1 pkg (8 oz) light cream cheese, softened
6 oz sugar-free chocolate pieces, melted
3/4 cup sugar-free cookies ie vanilla wafers or shortbread, crushed into crumbs
1/4 cup sugar-free strawberry preserves, seedless or strained
finely chopped plain almonds and/or cocoa powder for rolling
Combine the melted chocolate with the softened cream cheese and mix until blended. Stir in cookie crumbs and preserves. Chill overnight. Remove from refrigerator and shape into 1-inch sized balls. Roll balls in the crushed almonds and/or cocoa.
TEXAS COW PATTY CANDY
1 stick butter
2 cups Equal Sugar-Lite
1/4 cup cocoa
1/2 cup low-fat milk
1/3 cup creamy peanut butter
3 cups quick-cooking oats
1 tsp vanilla extract
In a 2-qt saucepan, combine butter, Equal, cocoa and milk. Cook over medium heat, stirring often, until mixture begins to boil. Boil for a full two minutes, stirring often. Remove mixture from the heat and add vanilla and peanut butter. Stir until peanut butter is melting. Add the oats and stir until all the oats are covered. Drop by a teaspoon onto waxed paper or lightly buttered cookie sheets. Allow to cool fully so candy will set.

What is Colonial Cooking Style?
Food formed an elemental part of the colonial culture, no matter whatever class of people it was served to. Most interactions took place among people when seated around the dining table. So a conversation started at dinner could very well carry on till late in the night! It was therefore imperative that the dining table be kept well stocked at all times. It was also essential that everyone know at least the basics of colonial cooking, be it woman or man, poor or rich, white or black.
Colonial cooking demanded that certain conditions had to be adhered to. Only a wood fire could be used for the cooking. The cook had to have knowledge about handling the fire so that food could be cooked properly. No food was eaten raw, not even vegetables and fruits.
Colonial cooking centered round a staple diet of meat cooked in various forms. In fact, animals were often cooked with their feet and heads still attached and were served in the same way! Anyone wanting to have chicken would find one, kill it and cook it in the morning itself, consuming it for breakfast, lunch and dinner to ensure that it did not get spoilt. The preference was therefore to always have fresh food on the table. Of course, there were certain animal foods that could only be obtained seasonally.
Curing or smoking was a method of preservation used at times because of a peculiar fondness for the organs of animals. Meat gravies and sauces were sopped up with the help of rolls. Drinks were also a part of their culture, and tasted quite sweet. Large amounts of alcohol were added to the punches.
A very basic style of colonial cooking was found among the lower classes, who had limited equipment to cook with. The meal served consisted of whatever could be cooked in just a cast iron pot — mainly a dish called “hominy” prepared from corn, vegetables and salt-cured pork. Other meats and vegetables were consumed with this main dish. Generally, the wife cooked porridges and soups in the pot.
The middle class were a little better, but even they were divided into lower middle class and upper middle class. While it was left to the ladies to attend to the cooking in lower middle class families, slaves could take over in the upper middle class households. On special days, both tried to keep up with the gentry.
Only next to the governor in status, the gentry indulged in expensive colonial cooking. The cooking more or less followed English traditions, with every meal combining both sweets and meats. They could afford to keep slave cooks. These cooks were quite skilled in spite of having less formal training. Not to be compared to the governor’s cooks, yet these slaves were held in high esteem and paid very well. In fact, a few slaves even became free via their cooking skills!
The best colonial cooking could be seen at the governor’s household. The kitchen was equipped with an eight-day clock, a spit jack, and plenty of copper pots. European cooks with professional training and trained apprenticeships were in charge as the principal cooks, and received princely sums for their efforts. No cook in the colonies could compare with them. Thus, the governor could afford to employ several cooks and sample different cuisines, though the dishes had a distinct French flavor.

The Thanksgiving Turkey
One of the more famous Thanksgiving traditions, at least in America, is having a Thanksgiving turkey for the celebratory dinner. There have been many different reasons given over the years as to why this particular bird is such a popular choice for Christmas and Thanksgiving dinners. So popular, in fact, that Benjamin Franklin wanted to make the wild turkey, not the Bald Eagle, the national bird of the United States!
The general consensus was that the cows were much more useful alive and beef was also not available commercially until around the late 19th century. Venison might have been a good choice as a Thanksgiving food but many people claimed they were not that excited about having to hunt for the game they would serve at their Thanksgiving feast. They also felt that rooster meat was too tough and the hens were more valuable for their eggs.
While brined pork and ham were both available, many felt that it was not a fitting meal for the day of thanks. As well, feasting on a Thanksgiving turkey was in keeping with the British holiday custom that settlers brought with them to the New World. Among the available birds, the turkey appeared to be the most ideal for an autumn feast, as the chicks born in the spring would have approximately 7 months in which to grow fat, just in time for the Thanksgiving table.
Economics was an important factor for most early settlers, especially since people were not necessarily preparing just one meal. Thanksgiving was also the time to bake other meats and pies and make preserves that would have to last throughout the winter as well. At one time the British ate swans and geese as a Thanksgiving tradition, but they finally came to prefer the turkey once it was introduced in England around 1540. Swans were not well received due to their diet; they sometimes tasted fishy unless they were fed seeds and wheat several weeks before being slaughtered.
By the time Abraham Lincoln declared Thanksgiving a national holiday in 1863, the Thanksgiving turkey was already at center stage, and for most it was already a family tradition. There are even some who believe that due to the popularity of “A Christmas Carol” by Charles Dickens”, showing a newly transformed Scrooge giving the gift of the holiday turkey to the Cratchit family, the bird’s status as the center of the Thanksgiving and Christmas holiday feasts was forever cemented.
