Cleaning the Cookers, Iron Skillets, and Stove Well
There are always proper steps when it comes to cleaning the cookers as well as the iron skillets and stove well. Cleaning them is not just washing them with water and detergent, but the kitchen steward also has to take into consideration safety precautions. This is done so as to protect himself as well as protect the equipment they are handling.
The first thing that needs to be done by the kitchen steward is to inform the cook or the chef that it is the scheduled time for cleaning the cookers, iron skillets, and stove well. Informing the chef is very important so that the chef has ample time to take away any unused food for storage in the refrigerator.
Once the unused food has been stored properly, only then can the kitchen steward turn the machine’s main switch off. Again, this is very important so as to prevent accidents such as an electric shock.
The next step is to, of course, clean them. First, he should get rid of any accumulated soils, grime, oil, etc. Second, he then has to make use of a scouring pad or a hand brush to wash the parts. The scouring pad or hand brush should be dipped in water and the right amount of detergent be poured. He should not pour too much detergent on the brush or pad though since it is a waste of money to waste detergent. Plus, it will take more time to rinse the parts off.
He should then thoroughly scrub all the areas as well as the sides of the machine so as to remove the soils. If there are soils that are hard to remove, he could make use of a scraper to remove them.
After a thorough scrubbing, he could then wipe off the excess liquid and detergent off with a cloth, dipping them in water and rinsing them to remove the dirty liquid.
Now that the cookers, iron skillets, and stove well are clean, the kitchen steward also has to tidy up the place. With a damp cloth, he should wipe off any soils or grime around the machine. This way, when the chefs come back to use the machine, the area is tidy and clean.
Aside from cleaning the areas around the machine, the kitchen steward still has to clean the floor since some of the dirty fluid may have dripped down the floor. With a clean mop, he should mop the floor up around the machine, making sure that he removes any spills.
The kitchen steward should also make sure that the floor is dry before informing the chefs that they can use the machine again. This way, accidents like falls and slips are avoided.
When everything is finished and the areas around the machine and the floor are clean, the kitchen steward can then inform the chefs that the machine is ready and that they can already resume their cooking there.
These are the steps on how to clean the cookers, iron skillets, and stove wells. The kitchen steward should always keep in mind his safety and the safety of others when cleaning the machine.

“Nice, efficient cookie press”
By K Chan (Seattle, WA)
I have used it four times by now. it is really easy to use and make nice cookies.
Note that some pattern are more easy to press out than the other.
“Recipe Adjustment”
By Skip L. (Colorado)
Simplicity and ease of use first time out of the gate. Most importantly, it produces GOOD RESULTS without hassle. Unlike earlier presses I have used (the old screw feed used as a kid, and a later electric feed thing with a long threaded stem down the tube which was a nightmare to use), this press proved to be very user friendly. The one-click = one-cookie trigger feed produces consistent cookies. Sweet.
I did notice that it is a little smaller than the old screw gun, and the cookies are smaller. My first batch looked miniature in comparison to the old ones, but they came out great. Averaged just under 2″ across per cookie. With the smaller size cookie, I found the included recipes to be way off on yield and cooking time. The included recipe indicated it would yield 48 cookies, with a baking time of 10-12 min at 375 degrees. My results, with their recipe, yielded 96 cookies (double their stated amount), and I found that they would burn if baked more than 7 minutes at 375 (the recipe lists 10-12 minutes which is charcoal city). And yes, my oven is calibrated. I believe this is partially due to the smaller size cookie the press clicks out.
Keeping in mind to expect a lot of smaller cookies, baking them for about half the stated time, the results are excellent. Make sure the dough is of the right consistency. If it is too thick, requiring a strongman grip to squeeze the trigger, you’ll probabbly blow the press apart.

This is why for the past ten years, I have spent an enormous amount of time in full contact … |
Knife Sharpening Experts: Amazing Ceramic Knives
When I first heard about ceramic knives, I couldn’t believe it. I know that ceramic statues that fall shatter into many pieces. Why would a ceramic knife be any different? Boy was I wrong. Ceramic knives are much stronger than I thought.
Ceramic knives are made out of zirconium oxide. They aren’t metallic whatsoever and have a flat, off-white to bright white color. Their composition is much harder than steel. Actually, they’re second only to diamonds, which are the hardest mineral of all. Isn’t that something?
There is another class of ceramic knives that have black blades. These blades start out as white zirconium oxide. With an additional firing process called sintering, they are converted into black zirconium carbide. This process gives the blades the advantage of being even tougher than before. Now they are the strongest knives out there.
There are definite advantages of ceramic knives over steel knives.
?Edge Longevity. Because ceramic knives are harder than steel knives, they can hold a sharp edge much longer. Generally, most ceramic knives can hold their edge for months if used correctly.
?Easy Use. Because they hold their edges longer, ceramic knives are easier to use than steel knives. Less sharpening is required. Not only that, they are so much lighter than steel knives.
?Wear Resistance. Ceramic knives do not stain or rust. They will not become discolored by food acides.
?Chemically non-reactive. You needn’t worry over whether or not your food will taste or smell like metal. Isn’t that great?
?Simple To Clean. Ceramic knives are non-stick. It isn’t ever necessary to use special cleaners or abrasives to get them clean.
Just as there are advantages, there are a few pretty important disadvantages to using ceramic knives.
?Expensive. Ceramic knives are usually more costly than steel knives. This is because zirconium oxide is a fairly advanced material and costs more than steel. In addition, imported ceramic knives, as most of them are, have a high import tax that adds to their price tag.
?Edge Fragility. Quality ceramic knives are not likely to shatter when dropped. They are, however, likely to gain a chipped edge or a broken tip. Even though ceramic knives are very strong, their edges are quite fragile. Cutting bone or anything of similar hardness, then, is out of the question.
?Breakable Blades. If you use your ceramic knife as a prying tool, you’ve got a very good chance of snapping the blade at the handle. Just don’t do it. While your knife isn’t meant for prying, the fact that the blade could actually snap in two when strong pressure is applied leaves room for concern. Use it only for cutting.
All in all, you are advised not to sharpen ceramic knives. When customers purchase ceramic knives, they are urged to let the manufacturers be the ones to sharpen them up. If that isn’t possible, they’re advised to bring their ceramic knives to a machine shop.
Sharpening a ceramic knife is not the same as sharpening a steel knife. It is a whole new animal. You’ve really got to already be a skilled sharpener. However, with good skill and the right tools, you really could sharpen them yourself.
Ceramic knives are truly amazing. They are highly efficient. Usability may be limited, but where you can use it, watch out. They are quite extraordinary.

What is the best chef knife?
What is the best chef knife?
Or maybe what is a chef knife?
There are 7 types of knives used in kitchens by chefs across the world.
Each one is used for a different purpose.
I’ve made a list of the more common ones:
- Bread Knife – obviously to cut bread, great for cake layers.
It is a long knife, usually 8″ to 10″ long or more, but more then that would be a bit uncomfortable.
The edge must be serrated for easy slicing.
- Boning Knife – Has a mid-long thin blade for cutting meat.
Usually 6″ to 8″ long. A straight edge blade (for slicing through the meat). The blade must be flexible and about 0.5″ wide, for easy use around bones.
- Carving knife – used for slicing dough, boneless meat, and cooked vegetables.
Usually will be between 6″ and 8″ long. The width of the blade should be about 0.8″.
Will also have a straight blade.
- Santoku Knife – This is a late addition to the chef’s knife arsenal.
Originally from Japan, it is mostly used to cut vegetables.
- Paring Knife – Used for thin filleting of fish vegetables or fruit.
Should be between 5 and 6 inches. Usually will be 5.25″ long.
Very thin blade and very flexible.
- Utility Knife – a short and very strong knife, about 3.5″ inches long.
Used for all sorts of small jobs with food and also very good for household uses.
- And Now: The king of knives: The Chef Knife
The Chef Knife has usually an 8″ blade, it could be 10″ or even 12″. It is a strong and somewhat flexible. Always with a very sharp straight edge.
A good cook, or chef will usually do most of his work using his chef knife, taking it everywhere.
It is the knife that he will never let anyone else touch.
He will make sure to keep it sharpened, clean and ready for use.

Chicago Metallic Professional Roast ‘n Broil Pan With Rack Reviews
The Chicago Metallic Professional Roast ‘N Broil Pan with Rack Reviews. In response to my request to help the problem is immediate and simple, and my back and running within days. The roaster pan quickly arrived at Golda’s Kitchen, but it was a mistake. I have not tried using a roasting rack comes with it, but it looks sturdy and well made and easy to keep clean. Yet I have only used the pan to bake some bread, Focaccia, and it performed perfectly and quickly clean up. I’m completely satisfied with your purchase, and looking forward to using it for many years.
I love Pan! And the pan itself and the same non-stick roasting rack coating. After wet, even the worst messes clean off easily by hand. The corners are all very smooth, so easy to clean. You can put it in the broiler and it’s okay. This is not Teflon, folks. The package says, it is also dishwasher safe, although I have not tried this yet.
The bed, this is a nice 2-1/4 inch deep. We found that great dishes such as aloo Tarkar?t (Currie potatoes), which is more difficult to leave the crud to clean glass casseroles. You could probably substitute a 13×9 casserole for most applications, should not be used until a sharp knife to cut the food pan.
The product description, which suggests he could use the ‘Grill the turkey for Thanksgiving’ is misleading – it may also be adapted to the Thanksgiving turkey bone! Chicago Metallic makes a large roasting pan, which is more suitable for meat. However, family dinners, I prefer the smaller size because it allows me that in addition to another small pan to cook the dish of meat at a time. The 13 ‘x9′ is a small saucepan. It’s great for a pork tenderloin or two, roast beef eye round, cut a few pieces of chicken (about 4 thighs) or a couple quail. The size also makes it easier to rent tent with foil to pan-fried the other right. And, of course, a clean interface, which is less than in a large pot.

Old Fashion Calico Beans And Simple White Cake With Never, Never Fail Frosting
We Americans are facing some financial difficulties and I understand many other countries are too. One of the ways we cut back is in the food budget. Suddenly we are eating more casseroles, ground beef instead of steak, etc. These Calico Beans are perfect for such times. You have ground beef, bacon, and three types of beans all in one dish. (Feel free to substitute other beans for the ones listed.) For dessert, bake this Simple White Cake and frost it with Never, Never Fail Frosting.
CALICO BEANS
1 lb lean ground beef
1/2 lb bacon
1 cup diced onion
1 can kidney beans
1 can butter beans
1 can pork and beans
1/2 cup brown sugar
1/2 cup white sugar
1 tbsp vinegar
1 tsp dry mustard
1/2 cup catsup
1/4 cup molasses
salt and pepper to taste
Preheat oven to 350 degrees.
Brown beef, bacon, and onion; drain off the fat. Add the beans, brown sugar, white sugar, vinegar, mustard, catsup, molasses, salt and pepper. Place in 2 1/2-quart bean pot or baking dish. Bake at 350 degrees for 40 minutes.
Serves 8 to 10.
SIMPLE WHITE CAKE
This recipe is from an old Church of Christ Cookbook dated 1976. I have no idea of the city or state.
1/2 cup Spry or Crisco
1 1/2 cups sugar
4 egg whites
1 1/4 cup cold water
3 cups cake flour
3 tsp baking powder
1 tsp vanilla
Preheat oven to 350 degrees.
Cream shortening, add sugar and vanilla; mix well. Add flour and baking powder alternately with water. Beat well after each addition. Add vanilla. Mix well. Bake at 350 degrees for 40 to 45 minutes in a greased and floured 9×13-inch baking pan.
NEVER, NEVER FAIL FROSTING
This recipe, to the best of my knowledge, is from an old midwestern church.
2 cups sugar
1/4 cup light corn syrup
1/8 tsp salt
1/2 cup milk
1/2 cup butter
2 squares chocolate
Mix in a saucepan; stir over low heat until butter and chocolate are melted. Boil one minute until a candy thermometer reads 220 degrees. Remove from heat, add vanilla, and beat until thick.
Note: For a delicious white frosting, omit the chocolate and make exactly as above, adding 1 teaspoon vanilla.
Enjoy!
